I chose to create this Blueberry and Lemon Cake after a cake guessing game
with a friend on Twitter. Blueberry Cake was mentioned and it got my juices flowing. I have used frozen blueberries as they are readily available in the freezer aisle in most supermarkets. For the cream cheese frosting I used Philadelphia but any full fat soft cheese would be fine. Reduced fat soft cheeses are available but don’t give the same creamy texture. Below is the recipe for my Blueberry and Lemon Cake complete with a cream cheese frosting.
Blueberry and Lemon Cake
Ingredients
Cake:
225g Stork
225g Self Raising Flour
1 teaspoon baking powder
100g Golden Caster Sugar
100g Light brown sugar
4 large eggs
zest of 1 lemon – finely grated
250g frozen blueberries – set a few aside for decoration
Filling:
Half a jar of Lemon curd
Frosting:
180g soft cheese (Philadelphia)
80g softened butter
300g sifted icing sugar
Splash of lemon juice
Method
Heat the oven to 160c fan.
Grease an line 2 x 20cm cake tins.
Put all the cake ingredients except the blueberries into a bowl and mix until smooth and creamy.
Now add the blueberries and carefully fold them into the mixture.
Divide the mix evenly between the two tins and cake for 35-40 minutes.
Remove from the oven when baked and left in the tins for 10 minutes before turning out onto cooling racks.
Whilst the cakes are cooling make the cream cheese frosting.
Put the butter, icing sugar soft cheese and lemon juice in a bowl and mix together until it is soft and creamy.
When the cakes are cooled start the assembly.
Put your bottom cake onto a plate and cover with a generous layer of lemon curd.
Next place the second cake on top of the lemon curd and coat the whole cake (top and sides) with the cream cheese frosting. The frosting should be stiff enough to be spread over the sides without running down.
Use the remaining blueberries to decorate the top. Before you put them on top of the icing dry them on a piece of kitchen towel. This stops the blueberry juice running into the frosting.
