When you get fed up of the same old spuds accompanying your meals give these Mini Jacket Potatoes with Sea Salt and Rosemary a try. They are quick and easy to prepare and very tasty.
I started making these as my hubby is quite fussy when it comes to potatoes so I needed to create something new to get out of a rut. I have served them on finger buffet stuffed with sour cream and smoked bacon and as part of a main meal. They are very versatile and easy to change around to suit your meal.
Mini Jacket Potatoes with Sea Salt and Rosemary
Ingredients
Serves 2-3
500g baby potatoes
Rapeseed Oil
Sea Salt
Fresh or dried rosemary
Method
Preheat the oven to 190c.
With a fork prick all the baby potatoes and then place in an oven tray.
Generously drizzle rapeseed oil over potatoes and shake the tray around to ensure they all have an even coating of oil.
Grind sea salt over the top of the potatoes and then sprinkle with either freshly chopped or dried rosemary.
At this stage you can add as much or as little salt and rosemary as you like, it’s a personal thing.
Pop into the oven for 1 hour, give the tray a shake over 20 minutes to prevent the potatoes from sticking to the bottom of the tray.
After an hour they are ready to serve.
If you are having a buffet, these mini jacket potatoes are perfect. Cook them as above and then when they come out of the oven add a couple of toppings.
1 tub sour cream
Smoked streaky bacon
Fresh chives
During the last 10 minutes the potatoes are cooking in the oven grill a few rashers of smoked streaky bacon.
When the bacon is cooked chop into small pieces.
Cut a small cross into the top of each potato and squeeze the sides to make it open up a little.
Put a small dollop of sour cream in the top of each potato and then scatter on some of the bacon bits.
With scissors cut some chives and sprinkle over the dish of potatoes.

Last time I made a dish of these mini jacket potatoes for a buffet every last one was eaten so they are a popular and very tasty choice.
