Orange Olive Oil Cake

This recipe for Orange Olive Oil Cake was inspired by Twitter and my recent purchase of a 12 Mini Bundt Cake tin from Lakeland. The recipe has been adapted from one shared with me by a Twitter friend in Portugal and the original recipe by Leite’s Culinaria can be found here. Made with navel oranges and fruity olive oil the cake has a deep, rich orange flavour.

I have scaled down the recipe from a  large Bundt Cake to 12 Mini Bundt Cakes and added an orange icing. Whether you chose to make a large or smaller version you will not be disappointed. The Extra Virgin Olive Oil gives a deep earthy fruit flavour, combined with a sharp orange taste is cake heaven.

Ingredients for a 12 mini bundt tin

175g plain flour
200g granulated sugar
125ml extra virgin olive oil
3 large eggs
zest and juice of 2 large navel oranges
1 teaspoon baking powder
1/2 teaspoon salt
100g icing sugar

Method

Preheat the oven to 180c fan. Grease the bundt tin with a little olive oil, getting into all the nooks and crannies. Then lightly flour the tin, this prevents the mini bundt cakes sticking.

Sieve together the plain flour, baking powder and salt.

Juice and zest the oranges, keep a little juice (about 2-3 tablespoons) to make the icing later.

Using a mixer, beat the eggs until well combined and then on a medium speed add the sugar and combine together. Keep beating until the egg and sugar mixture is a pale yellow colour.

On a slow speed add the flour and olive oil alternately until all is fully mixed together. Finally add the orange zest and juice. Once it is all mixed together you can fill your bundt tin. I find this easier to do with a ladle or you could pour it in with a jug. Whichever way you choose be careful not to over fill the moulds as you will not have holes through the centre of the mini bundts! Place in the oven and bake for approximately 20 minutes. Test with a skewer, which should come out clean.

Once baked leave in the tin until fully cool. If you try to remove them too quickly the cakes will break apart. Now they are ready for icing. Simply sieve your icing sugar into a bowl and slowly add the orange juice until the icing is a good consistency. You are looking for the icing to run freely off a spoon as you wave to across the cakes.
