Simple Citrus Muffins

Simple Citrus Muffins are a quick and easy sweet treat to make. No fancy ingredients or tricky techniques are needed. This recipe makes 12 tangy muffins which can be frozen before being iced if you need to.

Simple Citrus Muffins

Ingredients:

2 large eggs
250g self raising flour
100g white or golden caster sugar
150g softened butter
120ml milk
1 lemon
Lemon or Orange Curd for filling
100g icing sugar

Method:

Pre heat the oven to 180c fan and line a 12 hole muffin tin with paper muffin cases.

Using an electric stand or hand whisk, cream together the butter and sugar until the mixture turns a pale colour. I used golden caster sugar but simple white caster sugar would work just the same.
Add the 2 eggs and beat the mixture together.

Next add the finely grated zest of the lemon.

Using a slower speed, gently add the flour in until the mixture is fully combined together. The mixture will be very stiff and dry. At this point start adding the milk to slacken the mixture a little bit. It shouldn’t be a runny as regular cake mix but it should drop of a teaspoon with a plop!

Put a generous teaspoon of mixture in the bottom of each paper case, covering the bottom of the case. Then using either lemon or orange curd drop about half a teaspoon of curd on top of the batter in all 12 cases. Finally spoon the rest of the batter equally on top of each drop of curd until all the batter is in the cases.

Place in the oven and bake for 20 minutes. If you have used too much curd in Making the simple citrus muffinsthe centre of the muffin as it cooks it may bubble up and escape.

After 20 minutes remove from the oven and leave in the tin to cool until you can handle the muffins. Pop them into a cooling rack to cool completely. Once they are cold you can ice them with a very tangy lemon icing.

Sift the icing sugar into a bowl and then add the juice of the lemon a bit at a time. The icing needs to be runny enough to spoon over the muffins but not so runny that is runs right off the sides. By adding the lemon juice slowly you’ll will see the icing change until you reach the perfect consistency. As soon as the icing has set you are ready to enjoy your Simple Citrus Muffins.
