When it comes to making and eating scones my husband is the expert. He was
gifted the National Trust Book of Scones a while ago so for National Cream Tea Day we got baking together. We chose the Chocolate Orange Scone Recipe from Goddard’s House and Garden for a delicious treat. We made a couple of adjustments to the recipe but they were delicious.
I recently visited Amy’s Place in Torrin on the Isle of Skye. A lovely little tea room with amazing views of Bla Bheinn. Whilst I was there I purchased a jar of Butterscotch Sauce from The Wee Dairy from the Isle of Gigha. So this week I decided to create a cake to compliment the sauce. Here is my recipe for White Chocolate and Butterscotch Cake.
buttermilk left over for making Scotch Pancakes, Buttermilk Scones and so many other lovely treats. I decided to make Scotch Pancakes, with smoked bacon and maple syrup the very next day. You may also come across Scotch Pancakes known as Drop or Dropped Scones, there is very little difference other than the name. Traditionally cooked on a griddle or skillet over an open fire you can quite happily cook them on a hob in a heavy bottomed sauce pan or pancake pan.
After an impulsive blueberry purchase in the supermarket this week I thought
it best to bake a Blueberry and Almond Cake. There are so many recipes out there for Blueberry Muffins or Lemon & Blueberry Cake so I thought it would be good to have something a bit different. As it is my birthday this week my hubby said he would bake me a cake instead

This cookbook challenge recipe for slow roasted garlic and lemon chicken comes from Forever Summer by Nigella Lawson. The book previously belonged to my late Mother in law who sadly died in 2016. She had marked many recipes in this book but never got chance to make them all. In her memory I am working my way through some of the recipes she ear marked. The weather here on Skye has taken a turn for the better so after weeks of rain it’s time to get outside. We decided Saturday would be some gardening
and Sunday a hike. These plans meant I needed to bake a robust cake that would survive a trip in a rucksack, wrapped in tinfoil. It calls for a Guinness Fruit Cake, any stout, or very dark ale will do but we always have Guinness in the fridge.
If like me you aren’t a beer drinker fear not you will still enjoy this Guinness Fruit Cake. You taste the richness of the stout rather than the hoppy beer flavour!

ingredients. I’ve added an extra twist by covering it in Maple Syrup Buttercream and topping it with home-made Caramel Sauce.
